Our Producer’s Box is a collection of three out of our four coffees from the Corrales family’s estate in Matagalpa, Nicaragua. Byron runs hundreds of experimental lots, constantly learning, tweaking, and chasing after exceptional cups. The coffees in this collection are from his unique micro-lots and showcase the unique differences between a variety of processing methods.
This set features 8 oz tubes of our Nicaragua Anaerobic, Nicaragua Natural, and Nicaragua Honey, each from the same farm but processed differently. The Los Pinos micro-lots celebrate what coffee can be and our team has carefully roasted each batch to captivate our customers and showcase the beauty found in each bean. Our Nicaragua Anaerobic is an amalgamation of multiple high-quality coffee varietals finished used an anaerobic process. The coffee cherries are picked and placed into a vessel from which the oxygen is removed. This causes the cherries to ferment in a micro-oxygen environment, resulting in new, expressive flavors. This coffee from the Los Pinos Estate has a syrupy body and long-lasting, sweet-tart finish with notes of concord grape, mixed berry compote, hibiscus, vanilla, and bitter orange.
Our Nicaragua Natural is also an amalgamation of coffee varietals, patio-dried in a natural process that brings forward many rich tasting notes. This Single Origin has a juicy body and lingering finish with notes of dark cherry, light brown sugar, butter, and maple.
Our Nicaragua Honey is a honey processed coffee of a Java varietal usually found in Indonesia. Byron Corrales has challenged himself to grow as many varietals from all coffee regions at his farm as possible. This coffee has notes of peach, vanilla custard, and clover.
